Effect of Modified Atmosphere Storage (MAS) on Physical and Chemical Characteristics of Kepok Banana (Musa acuminata balbisiana) During Storage

Kepok banana (Musa acuminata balbisiana Colla) is a climacteric horticultural commodity susceptible to postharvest quality degradation due to continuous metabolic activity. The application of Modified Atmosphere Storage (MAS) through a combination of low temperature and reduced oxygen concentration is considered effective in retarding fruit quality deterioration. This study aimed to analyze the effect of MAS storage conditions on the physical and chemical characteristics of Kepok banana, including pH, total soluble solids (TSS/Brix), weight loss, moisture content, firmness, and color (L*, a*, b*, Chroma, Hue angle) over 9 days of storage. Three treatments were applied: room temperature (Room: ~28°C, O₂ 20.6%), cold storage T1 (15°C, O₂ 20.6%), and cold storage T2 (10°C, O₂ 5%). The experiment employed a completely randomized design with three replications. Room temperature storage produced the highest weight loss (42.20% on day 9), significantly exceeding T1 (12.45%) and T2 (7.90%). TSS under room temperature increased from 6.00 to 26.57 °Brix by day 5, indicating rapid starch hydrolysis, while T1 and T2 maintained TSS below 12 °Brix. A pH decline occurred under room temperature (5.96 to 4.57), whereas T1 and T2 maintained near-initial values. Flesh firmness at room temperature decreased drastically to 1.04 kgf/cm² on day 9, while T2 retained firmness above 47 kgf/cm². Overall, MAS at T2 (10°C, O₂ 5%) demonstrated the best efficacy in maintaining Kepok banana quality.
