Abstrak

Maju Prosperous Livestock Production Cooperative (KPT-MS) is a cooperative engaged in livestock and animal health.  Shredded is one type of preserved processed food ingredients derived from meat.  Meat is one of the important food ingredients in meeting nutritional needs and has a fairly high protein content.  The objectives in processing processed meat products are to extend the shelf life, change the product according to the wishes, increase the nutritional content of the product, and increase the types of processed products.  The purpose of this final project is to find out the Processing Process of Shredded Beef Products and Business Analysis at KPT-MS.  The research was carried out for ± 4 months, namely in February - June 2023. From the results of Observation of the Shredded Beef Processing Process carried out at KPT-MS, starting from meat preparation, cooking, preparation of papaya filling ingredients, preparation of onion filling ingredients, reduction of oil, mixing  all materials and packaging.  The results of Business Analysis Calculations obtained R/C values of 1.4 and Production BEP of 80 Pcs.
